When I’m out of ideas, I rely on easy meals, such as sheet-pan recipes, that help me get the job done in a flash. This week's delicious dinners are loaded with veggies, plus they’re made on a sheet pan, making cleanup easy. Your Meal Plan Jennifer Causey We know that vegetables are good for us, but sometimes it’s difficult to figure out how to incorporate them into our daily meals. For me, the easiest way to ensure that I eat enough vegetables is to make main dishes featuring them, like in this week’s lineup of veggie-packed sheet-pan dinners. Friday’s Chicken Nachos is a fun idea for a Friday night dinner, especially if, like me, you’re planning on staying home and eating dinner on the couch while watching a movie. This recipe features some ready-to-use ingredients like shredded cooked chicken, corn tortillas and canned black beans that make prep easy. Veggies like tomatoes, red onion, cilantro and jalapeño pepper are packed with flavor and health-supporting nutrients, such as fiber, vitamins and minerals. Not to mention, my favorite ingredient, the avocado, provides heart-healthy fats and lutein—a type of carotenoid that supports your brain health.
