The cocktail is a little high in added sugar, so we recommend enjoying it on occasion for a dessert-like treat. If you don’t have an espresso maker, you can substitute strong brewed coffee. Add boiling water; beat with an electric mixer on high speed until the mixture is thickened and very fluffy, about 3 minutes. Add egg whites and cocoa. Beat on high speed until the mixture holds its shape, about 5 minutes (the mixture will deflate first, and then it will get thicker). Divide between 2 coupe glasses and flatten the tops. Half-fill a cocktail shaker with ice. Add coffee liqueur, espresso and vodka. Cover and shake until chilled. Divide between the glasses, pouring through the middle of the whipped coffee mixture so it rises. Place 3 coffee beans on the foam of each cocktail for garnish, if desired.
