Coat a large rimmed baking sheet with cooking spray. Whisk sugar, cinnamon and salt together in a large bowl. Place egg white and vanilla in a medium bowl and whisk until foamy. Add almonds to the egg-white mixture and stir to coat. Add the almonds to the sugar mixture and stir to coat well. Stir, reduce the oven temperature to 200°F and bake until the almonds are dry and golden, about 30 minutes more. Let cool to room temperature before serving or storing.
