EatingWell's Editorial Guidelines From her indispensable bottles of extra-virgin olive oil to her original line of pasta, one thing we know to be true about Giada De Laurentiis is that she values simple, yet high-quality ingredients. Time and time again, some of her best recipes have very few ingredients, but still taste delicious. And she's proven this point again with her recent Instagram post that features a colorful White Bean and Sun-Dried Tomato Salad. There are a few reasons we love this salad. For starters, it's very easy to make, but it also showcases a multitude of seasonal flavors. Radicchio or red cabbage, both quintessential flavors of fall, combined with tangy and sweet sun-dried tomatoes make this dish a wonderful welcome to autumn. Plus, crisp romaine lettuce is always a nutritious, antioxidant-rich addition to a meal. What Is Radicchio and What Do I Do with It? We also appreciate this salad's other gut-healthy ingredients like white beans and extra-virgin olive oil. Both of these foods are rich in prebiotics, which makes them a great food source for the good bacteria in our microbiomes. With the right fuel, we have a chance of alleviating sneaky symptoms that may be associated with an unhealthy gut like chronic skin irritation and frequent headaches. But that's enough on why we can't wait to try it—let's talk about how to make the recipe. Giada: Ethan Miller/Getty Images. How You Can Make Giada De Laurentiis' 5-Ingredient Salad This recipe couldn't be much easier to make. Besides pantry staples like salt, pepper and extra-virgin olive oil, you just need 5 ingredients, starting with some red wine vinegar, white beans, chopped romaine lettuce and sun-dried tomatoes. For a fresh touch of color, De Laurentiis adds in either chopped radicchio or red cabbage at the end. Start by whisking the vinegar, salt and pepper in a large bowl. Slowly whisk in the olive oil until totally emulsified. Then, toss in the remaining ingredients until fully coated. From here, adjust with salt and pepper to taste, and this salad is ready to devour!
