This quick and easy stir-fry cabbage recipe pairs well with roasted chicken or pork, or serve it over rice with a poached egg as a vegetarian main dish. Sweet green cabbage is easy to find and works well here, but savoy cabbage or napa cabbage will work well too. For a slightly different flavor, use peanut oil in place of sesame oil.

How Do I Properly Prepare the Cabbage for Stir-Frying?

To prep the cabbage, discard the outer leaves from the head and rinse with water. Cut the cabbage head into quarters. Remove the thick core from the center of each quarter. Slice about 8 cups for the stir-fry, then store the remaining cabbage for other cabbage recipes.

Can I Use Any Type of Oil for Stir-Frying the Cabbage, or Is There a Specific Oil That Works Best?

We use sesame oil for the stir-fry. Look for a light neutral sesame oil, which is made with raw sesame seeds and perfect for high-heat cooking. Toasted sesame oil is darker in color with a stronger flavor and aroma, and is best used toward the end of cooking. If you don’t have sesame oil, you can use peanut oil instead. Refined peanut oil has a high smoke point that’s well-suited for high-heat cooking.

Ingredients

  • 2 tablespoons sesame oil

  • 8 cloves garlic, chopped 

  • 2 tablespoons chopped unseeded jalapeño pepper

  • 1 tablespoon minced fresh ginger

  • 1/2 small head green cabbage, sliced (about 8 cups)

  • 1 tablespoon reduced-sodium soy sauce

  • 1 tablespoon water

  • 1 teaspoon lime zest

  • 1 tablespoon lime juice

  • 1/4 teaspoon salt

  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat sesame oil in a large nonstick skillet or wok over medium-high heat. Add garlic, jalapeño and ginger; cook, stirring constantly, until fragrant, about 20 seconds.

  2. Add cabbage; cook, stirring constantly, until the cabbage just begins to wilt and the garlic is light golden brown, about 3 minutes. Add soy sauce, water, lime juice and salt; cook, stirring constantly, until the cabbage has wilted but is still crisp-tender, about 8 minutes.
